OUR STORY
Hello, there! Meet Brooke and Paul. Food, beer, and hospitality are deeply rooted in these families. Paul’s distant relatives run a pub in Scotland and another in Virginia. Paul’s great great grandfather owned a saloon along a railway in Missouri was the original home of our beloved family heirloom wooden bar back. It was rescued from a barn after a wicked tornado destroyed the rest of the family’s property.
While Paul grew up working and cooking alongside his mother, a well respected caterer for decades, he delighted in creating delicious dishes and serving people. This early experience shaped his career and led him to work in the restaurant industry from age 15, later helping open multiple restaurant concepts, designing large scale commercial kitchens, and creating new events and systems for wildly popular Austin institutions. His passion for beer and homebrewing developed while at the Alamo Drafthouse, where his decade of enthusiasm and tireless spirit led to an overhaul of the beer education and offerings there. Working with incredible brewers and industry professionals, he helped create popular events during the Craft Brewers Conference, beer pairing dinners, and exclusive in-house offerings with popular local breweries. Paul has enjoyed opportunities in his earlier brewing experience to work alongside and learn from the region’s most awarded and respected brewers and breweries in Texas.
Brooke grew up traveling the world on frequent flier miles her dad acquired in a hard-earned life in sales and learned about people, food, arts, architecture, design, beer, and wine. She developed a passion for beer particularly after a mind-blowing trip to Belgium in 2001. She’s the quintessential optimist and a shining star to her friends and family.
Paul and Brooke met at UT Austin while earning degrees in Fine Art Painting and Design respectively. They cooked up lots of fun with wild impromptu parties involving scrappy homemade meat smokers, home grown garden bounty, cheap wine, great beer and fine music.

Whew! That groovy feeling when you get new boots! Our brewers’ boots came in handy making this extra juicy delightful brew celebrating all things fun and bright. Made with both hops and Phantasm Powder from New Zealand, this brew transports to a lush landscape full of flavor. Juicy Boots is one of Paul the brewer’s absolute favorites.
Ghost Town Brown - Traditional Brown
Texas Brown Ale 6.2%
Malt: 2 Row, Crystal 60, Chocolate, Black, Torrified Wheat
Hops: East Kent Goldings
Aroma: Chocolate, Coffee. Flavor: Toast, Honey, Dry Pleasantly Bitter Finish
Named after one of our favorite songs by The Specials, we first made this Texas nod to British style in the dead of summer, when our little town felt strangely empty, and we thought it a fitting tribute to an English style Brown Ale). It may also have something to do with the spirited history of our area…Either way, we think sipping this feels like a connection to good things past while thoroughly relishing the present.
Palomino - Pre-Pro Style Pilsner

A beautifully balanced light beer made with the confident and gentle energy of a champion. Like its namesake horse, Palomino is a majestic beauty.

“Me & Paul” - Pale Ale
Pale Ale, 4.6%
Malt: 2 Row, CaraMunich
Hop: Wakatu (Nelson, New Zealand)
Aroma: Citrus, Floral, Lime, Flavor: Round bready malt, medium bitter finish.
A lightly hopped “single hop” Pale Ale using low Alpha Acid hops that produce an aromatic medium body malty ale with pleasing bitterness. Dry hopped again with the versatile Wakatu hops from Nelson, New Zealand (meaning “Nelson” in Maori language), we brought the idea back to Texas as an ode to Willie Nelson - a favorite and true Texas legend. His song, and subsequent book, “Me & Paul” chronicles the warm feelings of life on the road again with his longtime bandmate, Paul. As for Round Top Brewing’s “Me & Paul,” it is a style we love to crush - full of flavor, yet crisp and refreshing enough to have a few. We call this light lager the ultimate party beer. From “craft” beer devotees to hard-to- please macro beer lovers, All-In has us going All-In on the fun together, because beer made with love brings people together, y’all!
HWY 237 - Helles Light Lager
Light Lager, 4.3%
Malt: Pilsner, Vienna
Hop: Hallertau Mittelfruh
Aroma: Bread, grain. Flavor: Bright, soft and subtly sweet, dry bready finish.
The Highway to Heaven (and Helles) : HWY 237 - The road to Round Top and all that makes it heavenly to us, especially this namesake beer. Helles, simply meaning “light” or “bright” in German. Our 237 fits perfectly into this little town with a history of German immigrants who set up several small breweries in this area, where our water is very hospitable to these drier styles. Prost!
6 POINT Bock
Traditional German Style Bock 4.5%
Malt: Munich, CaraMunich 3, CaraFa, Vienna,
Hop: Safir, Tettnang
Aroma: Toast, oat, noble hop. Flavor: Toasty, roasted malt, sweet, bready biscuit, light bitterness.
The lighter little “counterpoint” to our 12 Point Doppelbock, 6 Point drinks like a sturdier version of a simple and classic German Bock. With a fairly rich but not sweet malt profile and a pleasant dry and softly bitter finish, this is certainly a beer that’ll grow on you!

We also have a specials board and our seasonal menu changes a little each day during non-show times. Items may sell out or be replaced as ingredients are available. While we love To-Go orders, there may be times during the busiest Antiques Show days that we are not able to accommodate. All To-Go orders will incur a nominal surcharge. Thanks for understanding.
Each component is made from scratch. Even when the pub is closed, our staff works daily on brewing beer, ordering, stocking and prepping to serve the highest quality food in a comfortable environment.
Our teeny tiny food-truck sized kitchen is small but mighty. Food rolls out as ordered via dumbwaiter from the “attic” kitchen in our historic early 20th C. farmhouse.
The pub is counter service, open seating, and our staff will bring your food to your table. First come, first served. Please contact us if you have questions about a private event. Cheers!
